Sweet Potato Chocolate Chip Cookies

Gluten Free, Dairy Free, Paleo Friendly

I am eating paleo for January as a nice little “reset.” Eating a certain way doesn’t mean that we should deprive ourselves of things we enjoy, so I was looking for a more nourishing way to get my dose of chocolate chip cookies in! A good friend of mine shared a recipe and I made some tweaks and came up with these fluffy and delicious cookies!

PREP TIME: 5 minutes

COOK TIME: 20 minutes

SERVINGS: 12 cookies

INGREDIENTS

  • ~1.5 cups of baked sweet white sweet potato (I used two sweet potatoes)

  • 1 scoop vanilla protein powder

  • 2 eggs

  • 3 tbsp ghee (or your choice of paleo-friendly butter)

  • 2 tbsp maple syrup

  • 1/2 tsp vanilla

  • 1/2 tsp baking soda

  • 1 pinch salt

  • Chocolate chips (measure with your heart!)

INSTRUCTIONS

  • Preheat the oven to 350 F

  • Mix all ingredients together. Make sure the sweet potatoes have cooled so it doesn’t melt the chocolate chips!

  • Spoon dough onto parchment paper

  • Bake for ~20 minutes

  • Enjoy!
